Lemon Herb Quinoa

INGREDIENTS:

 2 cups vegetable broth
 1 cup quinoa rinsed and drained
 1 clove of garlic
 2 tbsp lemon juice
  cup fresh parsley, basil, chives, or a mix of fresh herbs
 salt and pepper to taste
 zest of half a lemon, to taste
 2 tbsp butter or olive oil

DIRECTIONS:

In a large pot, combine the broth and quinoa. Bring to a boil. Cover, reduce heat, and cook until broth is evaporated and quinoa is tender, about 15 minutes. Remove from heat and let stand for 5 minutes, covered. Remove lid and fluff the quinoa with a fork.

Stir in butter (or olive oil), garlic, lemon juice, and chopped herbs. Season with lemon zest, salt and pepper, to taste. Drizzle with ranch dressing or sour cream on top!
