Nutty Being Healthy Quinoa Cookies

Sometimes trying to be healthy makes you go crazy. Who says you can't have "healthy" cookies, made out of quinoa, bananas, peanut butter, coconut, and your choice of either raisins, blueberries, craisins, or chocolate chips!

INGREDIENTS:

  cup water
  cup quinoa, uncooked (don't need to rinse it)
 1 cup coconut, shredded
 1 cup oats (rolled oats, quick oats, etc)
 1 cup flour
 1 cup brown sugar
 2 bananas of a ripe old age!
 ½ cup applesauce OR yogurt
 ½ cup peanut butter (crunchy is the best for this!)
 1 tsp vanilla extract
 1 tsp salt
 1 tsp baking soda
 1 tsp baking powder
 ½ cup raisins, blueberries, chocolate chips, or craisins (OPTIONAL!)

EQUIPMENT:

 9x13 Baking Pan

DIRECTIONS:

Cook the quinoa

Bring water and quinoa to a boil in a saucepan. Place a cover on the saucepan, reduce heat to medium-low, and cook at a simmer until the moisture is absorbed completely, 15 to 20 minutes.

Mix all ingredients!

Preheat oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets.

In a large bowl, mix all of the cooked quinoa, and all of the ingredients. Drop by spoonful onto prepared baking sheets, about two inches apart. Bake for 20-25 minutes until slightly brown on the edges. Makes approximately 40 cookies!
