I like my peanut butter cookies slightly crispy on the bottom but with a lot of chew! These cookies are perfected with a hint of salt.

 1 ¾ cups brown sugar, packed
 1 ¾ cups creamy peanut butter
 2 eggs
 ½ tsp vanilla
 some coarse salt

Preheat your oven to 350 degrees F. Put parchment paper on cookie sheets.

Whisk the brown sugar with the eggs, then whisk in vanilla. Measure out your peanut butter and stir into the cookie batter until it's pretty well mixed.

With the cookie scoop, scoop directly into 2 inch balls onto the cookie sheet. OR you can scoop balls and roll them in your hands for a smoother look. You can flatten with a fork if you want, but that's optional.

Bake for 17 minutes for slight crispy bottom, or if you want ultra chewy, bake for only 15 or 16 minutes.
