Preheat oven to 400 degrees. Grease a 12 mini muffin cup tin. Mix 1 cup cooked quinoa, 1 egg, ¼ teaspoon salt, ½ teaspoon pepper, 3 tablespoons marinara or spaghetti sauce, ½ teaspoon garlic powder, 3 teaspoons italian seasoning and ½ cup shredded cheese in a bowl. Pack 1 tablespoon of mixture into muffin cups; Bake for 12-15 minutes.
Remove from oven, top with more shredded cheese, and then broil about 30-60 seconds. Allow the pan to cool 15 minutes, remove pizza bites from pan, then serve with marinara sauce.
