Quinoa Tapioca Pudding

Introducing the quinoa alternative to tapioca pudding! Add in raisins or walnuts if you want it to resemble rice pudding. Eat this up for breakfast or a healthy dessert!

INGREDIENTS:

 2 cups orange juice
 ¾ cup quinoa, uncooked, and rinsed
 2 bananas (sweeter at a ripe old age!)
 3 tbsp cornstarch
 2 tbsp sugar
 1 tsp cinnamon
 2 cups milk
 ½ tsp vanilla extract
 1 tbsp butter
 ½ cup raisins or walnutsif you like a licorice flavor, stir in a few star anise seeds.

DIRECTIONS:

Rinse and drain the quinoa. Bring orange juice and quinoa to a boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover, and simmer for 15 minutes. Remove from the heat.

Blend together the milk, bananas, sugar, cinnamon, and cornstarch in the bowl of a blender or food processor until smooth. Pour the milk mixture into the saucepan with the quinoa. If you're using raisins and walnuts, add these into the saucepan, too. If you like a licorice flavor, stir in a couple star anise seeds.

Place the pan over medium heat. Cook and stir until the mixture becomes thick and creamy, 5 to 10 minutes. Remove from the heat. Stir in the butter and vanilla and serve warm, or nice and cold topped with fruit.
